Bruschetta is one of the simplest and quickest things to make and can be profoundly delicious if you use the highest quality ingredients. Because there are only a few ingredients, each one is important. A quality extra virgin olive oil and balsamic, good rustic Italian bread, fresh basil and garlic and the proper blend of seasonings to add that classic Tuscan zing.
Ingredients:
4 Medium-sized ripe in season tomatoes
8 Small slices of rustic Italian bread
3 Garlic cloves
Coarse Sea Salt
1 Tablespoon Taste of Tuscany seasoning (or more to taste)
1/4 Cup balsamic vinegar
1 Tablespoon chopped fresh basil
1/8 Cup extra virgin olive oil
Method:
Dice tomatoes and place in bowl
Mince 1 garlic clove into bowl
Add balsamic and olive oil
Add a pinch of coarse sea salt
Add Taste of Tuscany seasoning blend and blend together well
Refrigerate mixture and let sit for one hour
Grill bread on a charcoal grill, turning every few minutes until brown
Cut other two slices of garlic in half
Using one end of exposed garlic, rub each slice of bread, gently squeezing to extract juices
Spoon bruschetta mixture onto each grilled bread slice and garnish with chopped basil
