Best Buy Dates
If best buy dates on products are written rather than typed please note that in Italy, the all-numeric form for dates is in the following order "day month year", using a slash as the separator. Example: 31/12/2017 = 12/31/2017. The Italian written date of 07/09/2017 in the English form would be 09/07/2017. Best Buy dates are provided voluntarily by the manufacturer and tell you how long the product is likely to remain at its absolute best quality when unopened. But, as the U.S. Department of Agriculture's Food Safety and Inspection Service points out, it is not a safety date. “Best buy dates” are not a purchase by date or a safety date but a guidance for product usage. Our producers advise us that their estate bottled olive oils will have good sensory and quality characteristics for 2 years however once opened and stored properly should be used within 6 months.

Italian Made and Artisan Crafted
It matters where you buy your products and we appreciate your consideration in supporting Italian artisan producers to help ensure that the true flavors of Italy are preserved and protected. Lasting relationships with regional artisan suppliers and our personal sourcing of products reflect our commitment to the culinary and cultural heritage of regional Italian food and sustainable farming practices that reflect our motto "from the land to the artisan's hand, from generational producers, from us to you". Our Italian producers, from time to time, may changes their package design. This in no way changes the originality and authenticity of the product.
We encourage you to read about our producers and the generational companies in Italy that we work with on the detailed page of the product description. The history "la storia" of the product and company are described in brief to help you learn more about the back story behind the food and who makes and curates the product. The Sourcing and Shipping of Extra Virgin Olive Oils

Because of the labor intensive methods of growing, picking and processing; some oil companies will bring in oil from different parts of Europe package it in Italy and call it “Made in Italy”. But bottled or packaged in Italy doesn’t mean the same as cultivated and grown. It’s important to look at the origin of the oil not just where it’s bottled. We have a direct relationship with our producers in Italy, visiting the farms, knowing the families. Our oils are sourced at their peak of freshness and current harvest and supplies may be limited. Unfiltered olive oils may contain flavorful olive bits and solids that will collect in the bottom of the bottle. These are considered to be desirable and do not affect the quality of the oil.
When olive oils are shipped in cold weather conditions the fatty acids of the olive oil begin to solidify, adopting a whitish color and waxy appearance. In many cases, it will look like two separate substances in the same container where the solidifying olive oil meets the still liquid olive oil with floating pieces of solidified olive oil in the liquid olive oil. These are not 'sediments' and they do not have any effect on the quality of the olive oil. They disappear simply when the temperature raises.

Question About Beans and Legumes

Are the beans and legumes processed in a facility where they process gluten? In our producers's workshop they also prepare farro. Not on the same days but farro contains gluten.
